Abstract

In this study, the researcher explores the impact of reducing food, paper, and consumable wastage on the hotel industry as a case study for the Hotel ABC in Invercargill, New Zealand. The hotel industry is one of the major contributors to environment pollution, the research purpose was to identify the impact of reducing this wastage on the environment as well as on the hotel industry. The study used a mixed method design; a questionnaire and interviews. Printed questionnaires were distributed to the in-house guests and forty completed questionnaires were collected. In-depth interviews were held with three hotel management staff covering three departments: food and beverage, front office, and housekeeping. The analysed data identified that portion control, buffet management, and dietary inclusivity are essential for food waste reduction. Electronic systems throughout the hotel operations were identified as a method for paper waste reduction. Reusable bathroom amenities and hygiene concern were found to be necessary for consumables waste reduction. The analysis further found that by reducing these wastages, Hotel ABC can benefit from the environment, operational efficiency, and customer satisfaction. The findings also elaborated on the initiatives taken by Hotel ABC to reduce waste. The researcher suggests for future research to consider the overall impact of waste reduction by considering all types of waste generated by the hotel industry, to gain a holistic idea.
